Baked Zucchini
I have a few zucchini recipes here on the blog already, but this is probably one of my most favorites (grilled zucchini is my absolute favorite). This is a very similar recipe, but I did add some garlic and pepper too.
Ingredients
2 tablespoons of lemon juice
2 tablespoons of EVOO
2 cloves of garlic
pepper
2 zucchini
Instructions
1. Slice the zucchini into βcirclesβ.
2. In a gallon ziploc bag, add the lemon juice, EVOO, garlic, and zucchini. Shake until well distributed.
3. Spray a cookie sheet with nonstick spray. Spread out the zucchini onto the cookie sheet. Season with pepper.
4. Bake 30 minutes at 400.
5. Serve!
