Chicken Lo Mein
I found this chicken lo mein recipe on Pinterest awhile back. It was really good, but pretty carby so it isn’t something we have often at all! But if you aren’t watching your carbs, give it a try.
Ingredients
2 chicken breasts cut into small pieces
1 tablespoon brown sugar
6 tablespoons soy sauce
1 teaspoon hoisin sauce
1 teaspoon black pepper
1 teaspoon sesame oil
1 teaspoon ginger
3 cloves garlic
4 tablespoon olive oil
1 cup shredded cabbage
1 cup julienned carrots
1 large chopped onion
16 oz ramen noodles
3 green onions
Instructions
In a small of bowl, whisk together brown sugar, 4 tbsp soy sauce, hoisin sauce, pepper, and sesame oil. Set aside.
2. In a larger bowl whisk together 2 tbsp soy sauce, ginger, and garlic. Then toss chicken in sauce.
3. Cook noodles according to the package. Drain and set aside.
4. Heat 2 tbsp olive oil in a wok. Add chicken and cook for about 5 minutes (when it starts to brown). Transfer to a plate.
5. Add the other 2 tbsp of olive oil to the woke and add the vegetables. Cook for about 5 minutes being sure to toss around.
6. Add chicken back to the wok. Add the cooked noodles, sauce from step 1, and toss everything together. Cook until chicken is done. Garnish with green onions.
7. Serve!
