A friend of mine on instagram introduced me to Joy Filled Eats. I went through their website and found SO many recipes I want to try. But one that we almost immediately tried was the taco casserole. And it was AH-MAZING! It is super easy to make, and even easier to make ahead of time and freeze. It is a definite meal we are adding to the rotation and a must for entertaining! We double this recipe for a group.

Ingredients (4 servings)

  • 1 pound of beef

  • 1 tablespoon of taco seasoning

  • 8 oz of cottage cheese

  • 1/2 cup of salsa

  • 1 cup of Mexican cheese

Instructions

1. Cook the beef in a skillet. Drain the fat. Mix with taco seasoning. (I do this different than the website). Add the beef to the bottom of a baking dish (I used a 9x9 for this specific serving size).

2. In a bowl, mix together the cottage cheese, salsa, and half of the Mexican cheese. Add that as the second layer in the baking dish.

3. Next add the other half of the cheese as the third and final layer. I sometimes add more to fully cover the top :)

4. Bake for 15-20 minutes at 400 (or until melted).

5. Serve!

**TIP - if you freeze this ahead of time, pull it out two days before cooking and place in the refrigerator to thaw. About 30 minutes before baking, remove from the refrigerator. Bake 15 minutes covered, then another 20 minutes uncovered.
