Bellpepper Egg Salad Boats
I love egg salad, but I have never found a great recipe to make my own. I have tried, but it is either too dry or too much mayonnaise. I also don’t care for egg salad on bread. I mean it is ok, but I really like it on salad. I get it often from Chicken Salad Chick. I saw this egg salad recipe on Instagram, and the user also used bell peppers instead of bread or salad. I decided to give it a try. It has become new item added to my weekly lunch rotations. It is super quick to make (and prep), and it is really healthy.
Ingredients
1 boiled egg
1/2 tablespoon light mayonnaise
1/2 teaspoon garlic powder
red pepper flakes, to taste
1 bellpepper
Instructions
1. In a bowl, mash up the egg, and mix in the mayo, garlic powder, and red pepper.
2. Cut a bell pepper in half and clean out the seeds. Fill with the egg salad mixture. Serve!
