Cauliflower Nachos
My Noom goal specialist sent me the recipe a while back, and I loved it. I wouldn’t necessarily fix it every time we did nachos because I also love my homemade tortilla chips, but it is a great alternative.
Ingredients
1 bag of cauliflower
2-3 sprays of avocado oil
1 tablespoon garlic powder
1 teaspoon chili powder
1 teaspoon cumin
salt
pepper
toppings - I used rotisserie chicken, bell peppers, onions, cheese, jalapeños
Instructions
1. Slice cauliflower into thin chip-like pieces. Spray with avocado oil and toss in garlic powder, chili powder, cumin, salt, and pepper. Lay flat on baking sheet. Bake at 400 for 25 minutes.
2. Remove cauliflower and flip. Add toppings. Bake again at 400 for 5-10 minutes.
3. Serve.
