Roasted Red Potatoes
I made these potatoes the other night for dinner with Emily and Justin. These are super easy to make and are perfect for a crowd.
Ingredients
- 3 pounds of red potatoes
- 1/3 cup of EVOO
- 1 1/2 teaspoons of salt
- 1 teaspoon of pepper
- 2 tablespoons of minced garlic (6 cloves)
- Roughly 2 tablespoons of parsley
Instructions
1. Preheat oven to 400
2. Cut the potatoes in quarters (or smaller for larger potatoes). I placed them in a bowl of cold water until I was ready to use them.
3. In a mixing bowl, mix together all ingredients except the parsley. I had to do this in two halves because my bowl wasn't big enough. You want to make sure all the potatoes are evenly coated.
4. Pour potatoes onto a cookie sheet (I used a pan with "lips" to keep the EVOO from rolling off the sheet) and spread into one layer.
5. Roast in the oven for about an hour. I flipped them with a spatula every 20 minutes or so to help with them cooking evenly.
6. Remove from oven and sprinkle with parsley, then serve!
