Breakfast Tacos
Lately we have been making breakfast tacos at least once a week. They are super easy to make, we keep all the ingredients at home, and it doesn’t require any thawing, ha! I make them multiple ways depending on what ingredients we do have. But I do have a basic “recipe” I follow and add things in. Check it out below.
Basic Ingredients
6 eggs
6 tablespoons of Mexican cheese
1-2 tablespoons of Sriracha Sauce
6 flour or corn tortillas
Extra Ingredients
Chopped Onion
Cilantro
Green Onions
Salsa
Cheese
Instructions
1. In a bowl, mix together the eggs, cheese, and sriracha sauce. Also mix in any extras you want to add. Sometimes we add onions.
2. Heat a skillet on medium heat and add cooking spray. Once heated, pour the egg mixture into the skillet. Continue to scramble until cooked.
3. While the eggs cook, cook the tortillas per their instructions (ours just heat for about 45 seconds in the microwave.
4. Simply add the cooked eggs to the cooked tortillas. Top as you wish. Brad likes to add more cheese and some sriracha sauce. I usually add sour cream and on occasion I add sriracha sauce or salsa. If I have cilantro I will add it too.
5. Serve! We usually serve it with chips and salsa.
