Baked Okra

I absolutely love fried okra. Brad loves my fried okra too. Well, I have been trying to eat healthier. With that said, fried okra doesn't equal super healthy. So I decided to try baked okra. It actually turned out really great and is a good alternative to fried okra.

Pizza Quesadilla

If you are dieting or just looking for a healthier way to eat pizza, this recipe is for you. It is really quick to make and is easy to customize to everyone you are feeding! I'm sure it would also make a great afternoon snack!

Bacon & Egg Sandwiches

On the weekends, I always try and cook breakfast for Brad and me.  He loves Bacon and Egg sandwiches.  After Valentine's Day, we had some Sister Schubert rolls leftover.  We rarely buy the tin of rolls for this reason.  But we decided to try using the rolls instead of loaf bread for our Bacon and Egg Sandwiches.  They turned out really well, and Brad wanted me to share this with everyone!

Cadbury Egg Crescent Roll

One of my favorite Easter chocolates is Cadbury Caramel Eggs.  Sometimes, we love these chocolates so much, we buy way too many.  Or maybe we receive a few too many in our Easter baskets.  Either way, the recipe below is a great and delicious way to use up those Cadbury Eggs...maybe even for breakfast!  Chocolate for breakfast is a good plan to me!

Easter Bunny Pancakes

I saw a picture of these cute Easter bunny pancakes online a few weeks ago, and I decided to try making them myself! I used our trusty old Bisquick pancake recipe and our pancake pen to make the perfect shapes!

BBQ Meatballs

BBQ Meatballs have turned out to be one of our favorite recipes, but it does take a bit of commitment of your time to make!  My friend at Cupcakes and Commentary actually cooked this for Brad and I one night and shared the recipe from The Pioneer Woman.  My recipe is identical to The Pioneer Woman's except I have converted this recipe to use 2 pounds of meat rather than the 1.5 pounds she uses.  Happy Cooking!
